Crema de Sant Josep (crème brulée) with nougat ice cream

  • Nougat ice cream
  • Crema de Sant Josep (crème brulée)
  • Cocoa crumble
  • 3 Maresme strawberries
Ingredients for the crema de Sant Josep (crème brulée)
  • 200 gr Egg yolk 150 gr Sugar
  • 1 l. Milk
  • Orange peel
  • 1 Cinnamon stick 1 gr Salt
  • 300 gr Cream
  • 70 gr Cornflour


  • Infuse the flavours in the milk, and mix the sugar, egg  yolk and cornflour in a bowl.
  • When the milk boils, incorporate the infusion prepared earlier into the mixture, strain, pour into a saucepan and bring to the boil, stirring constantly.
  • When it comes to the boil, remove from the heat.
  • Then add the cream and reserve.


  • Spoon the cream into the bottom of the dish.
  • Sprinkle sugar on top and burn using a blowtorch.
  •  Add the cocoa crumble (as an alternative, use crushed carquinyoli biscuits).
  • Place a scoop of nougat ice cream on top and arrange the strawberries on the dish.
