Crema de Sant Josep (crème brulée) with nougat ice cream

INGREDIENTS
- Nougat ice cream
- Crema de Sant Josep (crème brulée)
- Cocoa crumble
- 3 Maresme strawberries
Ingredients for the crema de Sant Josep (crème brulée)
- 200 gr Egg yolk 150 gr Sugar
- 1 l. Milk
- Orange peel
- 1 Cinnamon stick 1 gr Salt
- 300 gr Cream
- 70 gr Cornflour
PREPARATION
- Infuse the flavours in the milk, and mix the sugar, egg yolk and cornflour in a bowl.
- When the milk boils, incorporate the infusion prepared earlier into the mixture, strain, pour into a saucepan and bring to the boil, stirring constantly.
- When it comes to the boil, remove from the heat.
- Then add the cream and reserve.
PLATING
- Spoon the cream into the bottom of the dish.
- Sprinkle sugar on top and burn using a blowtorch.
- Add the cocoa crumble (as an alternative, use crushed carquinyoli biscuits).
- Place a scoop of nougat ice cream on top and arrange the strawberries on the dish.
